.When the earth elements (yeast and grain) combine with the elements of water and fire in a fascinating fermentation process, the bread will be created. As a result of these miraculous alchemical processes, bread contains most of the last element, air. It is from this air that good bread is baked. Made according to the old alchemical culinary art without rush, from a muddy pulp it becomes a sensual, tasty, and the most basic human food.

This is real kitchen magic. From the inedible (even harmful – when raw) wet flour pulp, after waiting for some time and baking, we get a wholesome food

How to bake bread at home

The easiest way to start baking homemade bread is to use yeast.

LEAVEN:
140g of wholemeal wheat flour (always spelled with me)
140g of white bread flour
240 g of water
2-5g of yeast

Start to mix in a bowl, cover with foil and leave in a warm place for a minimum of 6 hours

PART TWO:
545 g of white wheat flour (we can experiment by mixing the proportions of white and whole wheat flour)
90g of rye flour
355g of water
1 tablespoon of rock salt
2 tablespoons of honey

the leaven plus all other ingredients are mixed with the help of the kitchen processor (you can use your hands). Shape the dough into a ball, put it in a bowl, and let it rise for 4-5 hours. After this time (45 minutes before baking), turn the oven on to 230 degrees Celsius. Sprinkle plenty of flour on a clean linen cloth (so that the dough does not stick to the cloth, it is important that the flour covers the material tightly) and gently put the dough on it. Place the dough on a cloth in a bowl which will give the final shape to the bread. Just before baking, put the dough on a baking sheet lined with baking paper. Put the dough on the baking tray by turning the bowl over (just like children play with sand molds). Then gently remove the cloth, cut the surface of the loaf with a very sharp tool, and put the dough into the preheated oven.

Bake the bread for about 50 minutes. After 30 min. Turn the temperature down to 200 degrees. After baking the bread, turn the loaf upside down and leave the bread in the oven turned off for another 30 minutes.
